普遍常見的小吃 。 將紅蔥頭切碎爆香 ， 再加入豬絞肉拌勻 ， 後以醬油 、 五香粉 、 冰糖 、 胡椒粉 、 米酒等佐料燜煮 ， 後加入鹽調味 ， 即成淋料 。 並將其淋在白飯上 ， 即是臺灣中北部之 「 滷肉飯 」， 惟此食物在臺灣南部則慣稱之為 「 肉燥飯 」。 將白飯配上一些當令的菜餚 ， 再加上一塊用滷料燉煮過的五花肉 ， 在臺灣南部多稱之為 「 滷肉飯 」， 惟此食物在臺灣中北部則慣稱之為 「 炕肉飯 」。
