1. (N) || 麵筋。一種麵製的食品。麵粉調水攪拌後形成一個具有彈性的麵糰,把麵糰放置一段時間,使溼筋網狀結構形成後,再進行洗筋。洗筋是在流動水中搓洗麵糰,以把澱粉及水溶性物質洗出,剩下的蛋白質凝結成球團狀的,就是「麵麶」。
